We are your local bakers in Manningtree high street, hand crafting traditional breads for you each morning, the ‘old fashioned’ way, or artisan bakers if you like, baking with passion as we have done for generations.
We use untreated, unbleached flour from Greens Flour Mills of Maldon, milled from locally grown wheat. Our wholemeal flour is all stone ground by Marriage’s using hand cut 100 year old French burr stones.
We use traditional long bulk fermentation & overnight sponge & dough methods along with low levels of slow acting yeast & salt.
We even grow our own culture for making sour dough breads as our ancestors have done for thousands of years before us.
As you can guess we use no preservatives or additives & try to source our ingredients locally using small independent suppliers.
I start baking around 4 o’clock each morning to ensure that our bread is coming out of the oven as our shop opens between 8.00 & 8.30am, how’s that for fresh?
My name is David Smith, a third generation baker, I’ve been looking after the bakery since Mr De’Ath retired in 1985, he had the privilege of the previous 32 years & Walley Peachy for about 25 years before him. We’re still using the same traditional methods & similar recipes; we still have many of the same customers & even one of the bakers!
